Brief cryomaceration and gentle pressing. Fermentation at a controlled temperature of 15°C–16°C. Aging in stainless steel with periodic lees stirring.
On the nose, aromas of small red berries. On the palate, it offers a pleasant spicy note.
Pairs well with typical Apulian dishes featuring fish, white meats, and cheeses.
