Susumaniello, with an intense red color.

A short pre-fermentation maceration of the destemmed grapes is carried out at a temperature of 12–14°C to extract their characteristic aromas, followed by a fermentation lasting 15 to 20 days at a controlled temperature of 24–26°C. Then, malolactic fermentation is initiated. Finally, the wine matures for about 6 months in large barrels.

On the nose, ripe red fruit, spices, and balsamic notes. On the palate, it is structured and dominated by mature tannins, with great intensity and lasting flavor.

Ideal with Apulian dishes such as orecchiette with turnip greens and pork chops in sauce.
