A unique new wine is born for the winery: Paralupi is a passito red wine, made from grapes that wither on the vine for about 20 days. It's a calculated risk taken by the careful producer who entrusts the success of the project to the climate and weather conditions. In the vineyard, measures of protection and care are applied to the grapes, allowing them to express themselves with extreme elegance.
A brief pre-fermentation maceration of the destemmed grapes at a temperature of 12−14 ∘ C extracts the characteristic aromas; this is followed by a 20−25 day fermentation at a controlled temperature of 24−26 ∘ C. The wine is then separated from the skins to begin malolactic fermentation. Finally, the wine ages for about six months in barriques.
Appassimento Paralupi Rosso di Puglia is a blend of Negroamaro, Primitivo, and Malvasia Nera. On the nose, it offers aromas of ripe red fruit, sour cherry jam, and notes of vanilla and chocolate. On the palate, it is structured, dominated by velvety tannins. This soft and enveloping wine is the result of a winemaking philosophy that leads to great quality.
