Negroamaro, Primitivo, Malvasia Nera
The grapes dry on the vine for about 20 days, depending on the dehydration of the berries. A short pre-fermentation maceration of the destemmed grapes is carried out at a temperature of 12–14°C to extract their characteristic aromas, followed by a fermentation lasting 20 to 25 days at a controlled temperature of 24–26°C. Malolactic fermentation is then initiated. Finally, the wine matures for about 6 months in barriques.
On the nose, ripe red fruit, morello cherry jam, and notes of vanilla and chocolate. On the palate, it is structured and dominated by velvety tannins. A soft and enveloping wine.
Ideal with meat dishes, game, and aged cheeses.
