Varvaglione Vigne & Vini, a winery established in 1921, invites you to enjoy an excellent gastronomic pairing, combining the delicate taste of the wine “12 e Mezzo-Negroamaro del Salento IGP Limited Edition” with a refined, typically Apulian menu consisting of an appetizer, a first course, and a dessert.


Negroamaro is historically one of the most widespread red grape varieties in the Puglia region, particularly in Salento. It is precisely this wine, with its intense red color and violet reflections, that offers intriguing olfactory sensations, accompanied by a fruity and delicate taste, making it especially appreciated by the female palate, easy to pair, and suitable for any occasion.

What makes it enjoyable is the combination of several elements. To start, we suggest an appetizer of Burratine with Eggplant and Tomato Caponata, which is very quick to prepare and simply requires fresh Apulian burratine combined with eggplant, red onion, green tomatoes, red wine vinegar, extra virgin olive oil, and salt.
The main course, the highlight of this menu, is a first course featuring Cime di Rape, prepared with whole wheat Apulian orecchiette, cime di rape, garlic, filleted salted anchovies, bread crumbs, extra virgin olive oil, salt, and pepper.

To beautifully conclude the menu, we recommend an excellent dessert, Coppa Capriccio, prepared with vanilla or fiordilatte ice cream, peanuts, and fresh or preserved berries.
