The arrival of autumn in the winery marks the end of the harvest; with the tasting of the new wines, a new and important phase begins.
But this period also marks the beginning of the olive harvest, followed by mushrooms and chestnuts. Fruits and vegetables in shades of orange and red warm up the surroundings (and our bellies!).
Here at Varvaglione, while the wine ages in the barrels, we get busy in the kitchen, pairing three of our red wines with equally typical local products. A Malvasia Nera, a Primitivo del Salento, and a Primitivo di Manduria Dolce Naturale DOCG accompany simple dishes made with ingredients from our land. And here, the traditional recipes:
